RAPID TEMPERING AND DEFROSTING

The RF technology is already well established in many industrial food sectors requiring heating processes at a controlled temperature. A very successful application is, for example, the SOFTENING and RAPID TEMPERING / DEFROSTING of various frozen ingredients and intermediates (butter, honey, meat, fish, vegetables in blocks or IQF, etc.) which benefit from the following advantages:

  • very short processing times (minutes rather than hours/days);
  • the product can be obtained at the correct temperature needed for the next processing stage, without interrupting the cold chain, even directly inside its original packaging;
  • the product quality is preserved at best as the drip losses and the deterioration of microbiologic, organoleptic, chemical and physical characteristics are minimized;
  • weather and external ambient conditions do not affect the process, so that it can be controlled accurately and consistently;
  • the production flow can be organized according to "just-in-time" criteria;
  • floor space required and processing costs are reduced drastically.

For other applications, STALAM is currently a holder of National and European patents in partnership with food manufacturers and Research Institutes. For new product development or for innovation within existing processes, STALAM is able to conduct tests "in house" using the plant laboratory facilities. STALAM is also available to study clients processes and recommend tailored solutions to enable customers to meet their business objectives.
